Let your Inner Culinary Artist Shine as we explore how to compose a beautiful and balanced dish that speaks to the season! Autumn is at its peak and farmers markets are bustling with heirloom varieties of pumpkins, squashes, apples, pears, persimmons and other healthful ingredients. Personally, it's my favorite time of the year to shop and cook!
During this demonstration, I'll share with you the benefits of aligning our diets to the season, supporting local agriculture (including imperfect foods) and eating the rainbow.
I'll walk through a recipe for a hearty Farro Salad which can be prepared to suit your tastes and then discuss the art of balancing color, taste and texture to create an end product that truly delights the senses.
This is an example of how I composed this dish but you can use your intuition to make it your own. I’ve heard from some of our HSP cooks that they’ve substituted Asian Pears for apples, raw turnips for radishes and even added in soft cheeses like goat or feta. You could even try roasting the delicata squash seeds for an extra crunch. Remember to channel your inner culinary artist and enjoy the creative process of cooking!
